The Water stays in drops because cohesion. This is when water is attracted to other water particles. Surface tension describes why it's able to stay in drops on a table cloth. When water is dropped onto a tablecloth it stays in spheres because the water molecules pull itself into a shape with the smallest amount of surface area.
